Delight in the flavours of the Med on SKYLARK

Amalfi’s gelato-tinted buildings cascading down the seaside cliff into the sea is the view from my “office” (SKYLARK’s galley). On the counter is a mound of aromatic local lemons, waiting to be transformed into homemade limoncello and a classic tarte au citron. The aromas of saffron, white wine and bay leaf from the fish stock simmering on the stove fill the air as I finish filleting and cleaning a fish. Dinner tonight starts with a crudo of coquilles St-Jacques drizzled with fennel-infused oil and dotted with a fine dice of housepickled citrons, continues with roulades of monkfish rolled in pancetta and accompanied by a confit of cherry tomatoes with a saffron foam, and finishes with a classic tarte au citron with lavender ice cream for dessert; to follow, we will offer chilled limoncello. Antigua Charter Show 2012, the Highlight of the Winter Season

What better way to start the Holiday season than under the warm Caribbean sun? Do not be deceived though, our four professionals will not be vacationing in Antigua but will fly in for the 2012 Antigua Charter Show that will take place this year December 2nd-9th in three marinas on the island: Nelson’s Dockyard Marina in English Harbour, The Falmouth Harbour Marina and the Antigua Yacht Club Marina both in Falmouth Harbour.

This year’s edition of the show will showcase over 100 of the world’s most luxurious charter vessels, including five Sunreef Yachts catamarans: IN THE WIND, ABUELO, DAMRAK II, SKYLARK as well as IPHARRA. All of the islands in the Caribbean being undoubted winter hotspots, it is nonetheless Antigua that steals the show the first week of December.

Sunreef Yachts Charter experts understand that clients’ priorities are the key to success and this is why the week spent in Antigua is a very constructive period. We will inspect yachts to get an up-close and personal view of various types of charter yachts including luxury catamarans, luxury mega yachts, luxury powerboats and charter sailing yachts. Meet the crew of SKYLARK

Luxury catamaran SKYLARK is the newest addition to the Sunreef Yachts Charter fleet and we take the opportunity to present you with her top-notch crew, Captain Jez Fletcher and Chef Caro Uy. This always cordial and friendly close-knit team is devoted to excellence and their passion for traveling and the open seas has taken them to remote places around the world. Now they are up for a new seafaring adventure aboard this high performance power catamaran and are already anticipating treating guests to a royal service.

Do you have a personal favorite destination?

Jez: BVI. It is a beautiful and varied destination with small safe anchorages.
Caro: Corsica in the Med, and the Grenadines in the Caribbean. Jez speaks from the point of view of a captain while I am interested in provisioning. Corsica is a spectacular destination with its craggy coastline and wonderful produce: the maquis (wild herbs), fig trees, chestnuts and olive oil that add a unique tint of flavor to my dishes. The Grenadines offer unique fragrant bay leaf varieties, fresh spices and great lobster, plus friendly local culture and stunning anchorages.
