Conch Salad with Turmeric Vinaigrette
(may substitute with fish)
Ingredients:
300 grams of Conch meat or deep fried fish
10 cherry tomatoes
1 medium red onion
½ red pepper
½ yellow pepper
Coriander
Green onions
Turmeric Vinaigrette
1 tsp. minced ginger
1 tsp. minced garlic
1 tsp. turmeric
1 tsp. brown mustard seeds
salt& pepper
Olive oil
1 whole lime
Preparation:
Boil the conch meat for 45 minutes to 1 hour in salted water
Slice and reserve
Slice all vegetables Julienne style
For the vinaigrette toss together all the ingredients, heat the oil and add to
the mixture
Cool down and add lemon juice
Mix, the conch meat and vegetables and add the vinaigrette
